Pumpkin Spice Oatmeal Recipe

One reason I love fall is because of the harvest.  No, I'm not harvesting anything here in midtown Manhattan, but I do see the foods of harvest season everywhere I go. To celebrate, I've been starting my day off with Pumpkin Spice Oatmeal.  Since oatmeal does not photograph well and  you know what it looks like, I didn't take any pictures. ;) 1/2 cup oats 1 cup water 1/2 cup canned pumpkin … [Read more...] about Pumpkin Spice Oatmeal Recipe

Running without a Mantra

I heard once that running is 20% physical and 80% mental.  Your mental game can make or break your run on any given day.  One way to combat this is with your own personal mantra.  My running mantra happens to made up of numbers instead of letters. This morning I baked vegan banana-chocolate chip bread.  They were inspired by the zucchini spelt muffin recipe from the book.  A co-worker is moving to sunny San Diego, so I thought this would be the perfect healthy … [Read more...] about Vegan Chocolate Chip Banana Bread

Last Minute Race

I'm super excited because on Saturday I'll be lacing up my sneaks for a 4 mile race!   When I noticed there were still spots available earlier today, I decided to sign-up.  NYRR races are capped and usually fill up before race day. I love love love four mile races in Central Park.  It may be my favorite distance to race.  Its much less painful than a 10k and yet longer than a 5k (my least … [Read more...] about Last Minute Race
