Vegan Chocolate Chip Banana Bread

Eat, Drink and Be Vegan may be my all time favorite cookbook.  I’ve made at least 14 super yummy recipes from this book.  I’ve also enjoyed changing the recipes around a little.

This morning I baked vegan banana-chocolate chip bread.  They were inspired by the zucchini spelt muffin recipe from the book.  A co-worker is moving to sunny San Diego, so I thought this would be the perfect healthy treat to bring into to work to celebrate his new job.

Ingredients:

  • 2 tsp flax meal
  • 1/2+2 tbls cup of non-dairy milk (I used unsweetened almond milk)
  • 1 2/3 cups of smashed banana
  • 1/4 cup of maple syrup
  • 1 tsp pure vanilla extract
  • 2.5 tbsp canola oil
  • 2 cups of spelt flour
  • 1/4 cup of sugar (I used sugar in the raw)
  • pinch of salt
  • cinnamon to taste (I used a lot)
  • 2 1/2 tsp baking powder
  • 1/2 tsp of baking soda
  • 1/3 cup of vegan chocolate chips

Directions: Pre-heat oven at 375 degrees.  Grease bread pan and set aside.  Mix dry ingredients together in one bowl.  Mix wet ingredients (including the banana and flax meal) together in another bowl.  Add wet ingredients to dry ingredients.  Pour batter into greased bread pan.  Bake at 375 degrees for 40 minutes or until cooked all the way through.

I can’t wait until pumpkin season because, I’ll be baking pumpkin chocolate chip bread for myself.

      Thank you for the compliment. No, I’m not vegan. I do like the idea of making vegan recipes from time to time. I’m not sure I could ever give up dairy.

    The pumpkin chocolate chip bread is from Cooking Light, if it’s the same one I make every year, and it’s AMAZING. I haven’t made it yet, but maybe your recipe is different. I can’t wait to make it for the season, and freeze it so I have it throughout the fall!

    Ok I have this cookbook, and everywhere I go in the blogosphere, someone is making something from it that I had NO IDEA was even in there. I wish she used more pics b/c I am really visual and need to see the finished product sometimes otherwise I just gloss over the words. Like I probably woulda (and have) glossed over this recipe. But you made it look so good, now I will make it 🙂 I have to make it GF and will sub out the flour for oat or almond flour, but other than that, yumm!

    Oh and what vegan choc chips do you use? If you say Enjoy Life I’ll have to kill you b/c they’re like $6-7 a bag. Sorry, that didnt come off right 🙂

    I use dark chocolate in place of chips these days, and call it a day. It may have trace dairy but whatevah.

      Hey Averie! Thanks for stopping by! The chocolate chips are Whole Foods 365 brand and no they are not $7! Besides, I’m not vegan, but sometimes like to pretend I am.;)
