Pumpkin Spice Oatmeal Recipe

One reason I love fall is because of the harvest.  No, I’m not harvesting anything here in midtown Manhattan, but I do see the foods of harvest season everywhere I go.

To celebrate, I’ve been starting my day off with Pumpkin Spice Oatmeal.  Since oatmeal does not photograph well and  you know what it looks like, I didn’t take any pictures. 😉

  • 1/2 cup oats
  • 1 cup water
  • 1/2 cup canned pumpkin puree
  • 1 TBS nut butter
  • Pinch of salt
  • Splash of vanilla extract
  • Pumpkin pie spice (to taste)

Directions: Bring water to a boil in a small pot on top of the stove. Add oats followed by remaining ingredients.  Mix together and cook for 10 minutes.  Let cool for two minutes. Pour into bowl and enjoy!

If you like your oats a little creamier, just reduce the amount of water.  For a thicker consistency use any type of milk in place of water.

    Do you usually use pumpkin pie mix in your oats? I couldn’t find any canned pumpkin at the store the other night and was tempted just to get pumpkin pie mix! Guess maybe I should try it!

      I don’t usually use pumpkin pie mix, but it was all I could find. Its a little tastier but a little less nutritious than pure pumpkin. Give it a try and let me know what you think.

    Something is going on with pumpkin puree….is there a shortage or something? I’ve had a heck of a time finding it lately. I must investigate! Pumpkin is one of my year round staples!

    Love the pumpkin spice oatmeal! I made a bastardized version of that over the weekend, just using TJs pumpkin spices, not actual pumpkin. Yours = delish. And so do your pics of the farmers market. And thanks for the plantar fasc empathy last nite…..muah! 🙂

    Mmm Pumpkin Spice Oatmeal sounds just as good as Pumpkin Spice lattes! Now I want both!

    I too love the fall and harvest season – the colors, the smells…the PUMPKIN!! Yummy recipes fit chick! – and your photo makes me want to run out to my farmer’s market right now!! Can’t wait to try those brownies!!
