What I Ate Featuring Strawberry Chia Pudding

As promised here’s what I had to eat the day before the big race.

Breakfast:

  • overnight oats (oats, almond milk, PB, maple syrup, a dollop of chocolate coconut yogurt)
  • apple
  • coffee

Lunch:

  • Sprouted ww tortilla w/ Dr. Prager’s veggie burger, spinach, onion, ketchup
  • 1/2 sweet potato
  • roasted brussels sprouts

Afternoon Snack:

Chia Pudding

  • 2 T chia seeds
  • 1/2 c. almond milk
  • 1T agave
  • 2 T cocoa powder
  • sliced strawberries

Dinner:

You can’t tell by the photo, but that’s actually a salad plate.

  • ww angel hair pasta
  • crushed tomatoes
  • olives
  • onion
  • loads of garlic
  • toasted pine nuts
  • parmesan cheese

Last but not least I ate an un-pictured oatmeal raisin cookie.

I hope you’re having a great weekend! I hear thunder outside my window, let’s hope the storms roll by before 8 am tomorrow.

    Good luck tomorrow!! I’m not looking forward to the rain (no half for me, but a long run scheduled).
    My stomach can’t handle garlic – I’m jealous! And I think it’s curious how many people are using chia seeds since Born To Run. Do you find that they help? Do you use them during a race, too?

    It looks like it’s gonna be a wet one! Running in the rain kinda sounds fun though ๐Ÿ™‚ Probably easy for me to say since I’m not running a half today – anyways, good luck!!

    By the time you read this you will be done, so I hope it went well!!!
    Your “day before the race” food looks fabulous. You need to post your food more often ๐Ÿ™‚ Those brussel sprouts look so good, they may actually cause others to want to try them!! Maybe you could post your Post race food too. Or maybe next time.
