Sweet potatoes are one of my top 5 favorite foods. I would say I eat one at least every other day.
Since I’ve been on a cookie kick, I thought I should try to distract myself with something equally as tasty.
Sweet Potato with pomegranate seeds and coconut milk
Inspired by Whole Living
- 1 sweet potato (or two tiny ones)
- 1/4 cup light coconut milk
- 1/8 cup of pomegranate seeds
Bake sweet potato for 40-60 minutes at 400 degrees (or until soft). Combine light coconut milk and pomegranate seeds in a small dish. When potato is ready, slice open and pour the coconut pomegranate mix over potatoes.
This was my first time ever having pomegranate seeds and I wasn’t sure how these flavors were going to mix together, but the flavors are amazing!

That looks soooo good. I love sweet potatoes but it never occured to me to put coconut mile instead of butter and pom seeds instead of cinnamon sugar!

Seriously, FIRST TIME EVER?!?! I have been living off of pom seeds for the past month and now I’m so sad because I can’t find them anywhere π Everyone says they are out. It’s pathetic. But thankfully I can still get my sweet potatoes! I love SP with walnut butter on top of my oats π I have to try it with pom sometime…hopefully soon!

I know, can you believe it! I’m just glad that at Trader Joe’s you can just by the seeds without having to buy the entire pom. I’m to lazy to harvest them myself. =)

Unhealthy Way: Mashed Sweet Potatoes with marshmellows on top! Mom’s Thanksgiving recipe, that has real maple syrup and butter. I could eat this straight out of the bowl. It’s heavenly! π
Healthy Way: Open Faced Sweet Potato with 2 fried eggs on top! Microwave the sweet potato for 5-6 minutes, then put the fried eggs on top, and add additional toppings to add more nutrition!

My favorite way to eat it is by roasting it in the oven!! Sliced of course. A little bit of salt and dried thyme with ketchup to dip. But that dinner pic made my mouth drool just now!! Awesome! Whoa! That sounds tasty! I haven’t had sweet potatoes in forever (what’s wrong with me?) but I do love to top them with cottage cheese for a shot of protein.

i love sweet potatoes! i think the best way to do it is steamed and mashed with a little salt. no oil or sugar added! steaming sweet potatoes gives the perfect consistency, i think.

I’ve never tried pomegranate seeds on a sweet potato, the looks great. My favorite way is to slice into fries, toss with a little coconut oil and salt, then bake – yum!
