This weekend when prepping your healthy meals for the week, take that one step further and prep your breakfast. On days when I’m not sipping a green juice or smoothie for breakfast, I’ve discovered a healthier alternative to nut butter and toast. It’s easy to make and tastes delicious.
Here are the three ingredients:
Simply bake a few sweet potatoes on Sunday when you’re prepping your meals for the week. During the week pop half a large sweet potato in the microwave for 45 seconds, drizzle with a tablespoon of almond butter, and top with a sprinkle of sea salt and you’ll have a deliciously warm fall breakfast ready to eat in 60 seconds or less.
Genius.
I never really thought of pre-baking the sweet potatoes.
I love this idea but I don’t own a microwave…although this would be a good take to work breakfast! Genius!
Wow, that sounds delicious… I think I’ll try it for lunch today! 🙂
Sounds good to me! I make my sweet potatoes ahead of time OR buy a bigger one & cut it in half & save the other half for another time! 🙂
This is one of my all time favorite combinations. I tell people about it all the time and they look at me with disgust on their faces. I tell them it sounds different, and maybe strange, but it’s worth trying!
Have a great weekend Jess!
Nice! I never thought of this combo but it sounds divine. Two of my faves together as one…
Great idea and sounds yummy! Steam the sweet potato instead of microwave and you’ll keep all the nutrients intact and undamaged 🙂
I tried this recipe for breakfast this morning and loved it! I usually have whole grain toast with almond butter, but that’s not really enough, so I’ve been thinking and thinking about some different breakfast ideas. Thanks for this one!
So glad you enjoyed it!
