Once upon a time when we were young, we crammed 3 guests into our 450 square foot apartment for Thanksgiving Dinner. Every recipe we cooked for dinner (except for the turkey) came from Cooking Light Magazine.
While deciding what to bake with all the apples we picked last week, I kept thinking about the Apple-Cinnamon Coffee Cake that we made that year. The cake was simple to make and tasted delicious.
This time I decided to veganize the recipe to see how it turned out. I also made a few other substitutions, based off the fact that I usually find Cooking Light recipes to be a little short on spice.
- Flax egg in place of the real egg (1 Tablespoon of flax meal + 3 Tablespoons of warm water)
- Almond milk in place of 2% milk
- Smart Balance soy free butter in place of regular butter
- Doubled the amount of apples
- Doubled the amount of cinnamon

The vegan version turned out to taste even better than I remember it tasting the first time I made it.

Apples are probably my favorite fall ingredient – even over pumpkin! I love using them in any recipe where they need to be roasted or caramelized.

I soooo love apples in the Fall- Braeburn are my favorite. Sometimes, I will chop up an apple, put some hot water on it, plus cinnamon and a sprinkle of sugar or Splenda, pop in the microwave for like 3 minutes and boom- a healthy little snack (drain the water, sometimes I add some spray butter too). This little shopping area around the corner from me has APPLE DONUTS. I may or may not have ever had any. Ummmmm. Yea.
