Vegan Apple Berry Muffins

Hi, my name is Jess and I mix muffin recipes on my living room floor.

Hopefully the day will come when I have a kitchen big enough to do all my mixing in. Maybe just maybe if I’m good, that kitchen will also have space for a table.

Imagine having a kitchen table like all the other grown-ups.

A girl can dream, right?

Vegan Apple-Berry Muffins:

Dry Ingredients:

  • 2 cups pastry flour
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1.5 teaspoons cinnamon
  • 1 teaspoon sea salt

Wet Ingredients:

  • 1.5 cups diced apples
  • 1 cup unsweetened vanilla almond milk
  • 1/2 cup frozen mixed berries
  • 1 flax egg (1 Tablespoon of flax meal + 3 Tablespoons of warm water)
  • 1 teaspoon vanilla extract

Directions:

Pre-heat oven to 350 degrees.

Make flax egg and set aside.

Oil muffin tin. Mix dry ingredients together. Mix wet ingredients (minus the mixed berries) together. Add wet ingredients to dry and mix. Mix in frozen berries just before spooning the batter into muffin tin. Spoon mixture into muffin tin (about 3/4 full). Bake at 350 degrees until baked thoroughly approximately 16-18 minutes. Makes 12 muffins.

    Oh New York…gotta love the spaces. But even if you don’t have a kitchen table, you at least get to live in one of the most amazing cities in the world. A fair trade-off?

    Those muffins look awesome! I’ll have to try this. Any ideas on nutritional info on them?

      I think it may come out to around 100 calories per muffin, but I didn’t calculate any of the other nutritional stats.

    Ha – my coffee table is bigger than my kitchen counter so that is where I do my chopping and mixing.
