Vegan Summer Berry Pancakes

Summer Berry Pancake Recipe

Ingredients

  • 1 1/4 C. Whole Wheat Flour
  • 2 T Sugar
  • 2 t Baking Powder
  • 1/2 t salt
  • 1 1/2 C Almond milk
  • 1 T Flax meal
  • 3 T warm water (to mix with flax)
  • 1/2 t Cinnamon
  • Dash of vanilla
  • 1 C Frozen mixed berries

Recipe adapted from Oh She Glows.

Mix flax meal with warm water, set aside. Mix dry ingredients together in a large bowl then add almond milk and vanilla followed by the frozen berries. Cook on med-high heat.

These are a delicious weekend treat!

    My fave pancakes are oatmeal cinnamon ones. I’ve never added protein powder to anything, I’ve never tried it at all but keep thinking I should!

    Your pancakes look great! Sometimes I do add protein powder – I find that a casein blend words the best for me.

    I love strawberry pancakes – the strawberries just get an amazing consistency when they are pancakified.

    I just found your blog and love it! Pancakes are one of my breakfast staples, but I usually stick to simple oatmeal/egg white ‘cakes. I love them with blueberries or bananas…but I’m not picky with pancakes!

    These sound so good. I’d have to say plain buttermilk pancakes are still my favorite. Silver dollars are even better. Yes, I’m 12. ๐Ÿ™‚

    These look great. I guess blueberry pancakes are my fav, but I’m looking forward to trying Any Phyo’s dehydrator Brazil nut banana pancakes.

    Oh my those look amazing! I usually just stick with Trader Joe’s multigrain mix but I might have to try making them from scratch. I love bananas and strawbs on pancakes!

    I made strawberry pancakes this weekend too! Blueberries are awesome in pancakes too. Yum.

    I usually use the TJ’s multigrain mix that Alex mentioned, but I should try making them from scratch sometime. Your recipe looks great!

    oh i wish i had these for breakfast! they look so good. i am not a pancake maker so i have never tried protein powder or anything else in them.

    Yum YUM! I am still lame and use pancakes mixes rather than making my own. My favorite pancakes are blueberry ones and I have never added protein powder to them. I actually don’t think I would ever use protein powder?

    Wow, those look fantastic! I think I could eat them alll!! LOVE pancakes! I usually use a flax mix that requires just eggs and milk and a touch of canola oil. They are delicious, though! I should make homemade ones soon! They look too good not to!

    Nick and I were JUST talking about pancakes earlier. I haven’t made them in a while. I don’t ever add protein powder to mine, mainly wheat germ, flaxseed, blueberries and/or peanut butter! I love this recipe though. I would have to take out the wheat and add an oat bran flour or something. I have yet to try that!
