Recipes That Won’t Leave You Sweating in the Kitchen

Cooking at home in the summer can be challenging. My kitchen gets so hot I feel like I just got back from a three mile run by the time the meal is complete.

Last summer, I either ordered takeout or ate smoothies for most meals. This year I’m determined to make healthful meals at home that don’t cause the temps in my apartment to reach above 80 degrees.

* Side note: I dream of one day living in an apartment with central AC, but for now I’m just fortunate enough to no longer live on the top floor of a building. The top floor gets so much warmer than the second floor! Also, I’m sweating just writing this blog post! 😉

Here are three recipes I keep making over and over again this summer that doen’t require too much sweat!

Lentil Salad with Mustard and Tomatoes 

Crunchy Cashew Thai Quinoa Salad with Ginger Peanut Dressing

Aztec Salad (inspired by Candle Cafe)

And when all else fails and you’re sweating before you even start to make dinner, drinking a beer while cooking helps!

    Oh yes, I’m all about drinking a beer while cooking, or lately…La Croix.
    We do have central air, but with this 90 degree weather I still hate using the oven! We don’t have an exhaust fan (yeah, it’s insane) so it heats up fast.

    I love those three recipes! It is so easy to do and definitely will not make you sweat. I love the idea of drinking beer while making this recipe. I would love to do this. Cheers! 🙂
