Recipe: Napa Cabbage Slaw with Peanut Dressing

I’m guilty of eating the same vegetables over and over again. I like variations of a theme, what can I say?

When I came across this simple recipe for Napa Cabbage Slaw with Peanut Dressing in Foods that Harm and Foods that Heal Cookbook: 250 Delicious Recipes to Beat Disease and Live Longer I had to give it a try. Cabbage is something I usually avoid cooking with at home, but eat in restaurants often.

Napa Cabbage Slaw with Peanut Dressing (Serves: 6)

  • 1/2 cup peanut butter
  • 1/4 cup hot brewed black or green tea
  • 4 tsp reduced-sodium soy sauce (or tamari)
  • 4 tsp rice vinegar
  • 1 1/2 tsp brown sugar
  • 1 tsp hot sauce (sriracha, chile-garlic sauce or tabasco)
  • 1 clove of garlic
  • 4 cups thinly sliced napa cabbage
  • 1 cup shredded carrots
  • 1/2 cup chopped scallions
  • 1/3 cup unsalted roasted peanuts

1. Place peanut butter in large bowl and gradually whisk in hot tea. Add soy sauce, vinegar, brown sugar, hot sauce, and garlic and whisk until smooth.

2. Add cabbage, carrots and scallions and toss to coat well. Sprinkle with peanuts

I altered the recipe by doubling up on scallions and sriracha to give it a little more of a kick. My husband and I loved it! We’ll definitely be making it again.

    I am a creature of habit too! I make a sweet and sour cabbage soup that is my grandmothers recipe. So good!

      Oh for sure. She used to add potatoes instead of the meatballs depending on the meal (and everyone’s eating restrictions). This is my go to soup!
