Chocolate Strawberry Super Pudding

You asked, you shall receive. I dug through the FCITC archives (aka I typed “chia pudding” in the search box on the fcitc homepage) and found the recipe for chocolate strawberry super pudding. This guilt free dessert is bursting with nutrients (think omega 3 fatty acids, fiber & Vitamin C) and can satisfy my sweet tooth.

Chocolate Strawberry Super Pudding

  • 2 T organic chia seeds
  • 1/2 c. unsweetened almond milk
  • 1T agave (or sweeten to taste)
  • 2 T raw cacao
  • dash of salt
  • 1/2 cup sliced strawberries

Directions: Combine chia seeds and almond milk. Stir in all other ingredients minus the strawberries. Chop strawberries. Cover the chia seed mixture and place in the refrigerator for a minimum of 20 minutes. Remove from refrigerator. Layer a small bowl with 1/2 of the sliced strawberries. Spoon the chia mixture on top of strawberries, then add the remaining strawberries on top of the pudding.

      Some people can’t handle the texture. It’s a little weird to say the least, but for some reason it doesn’t bother me.

    We have a number of raw chocolate recipes with Chia seeds in it check out this one
    Chocolate Truffles

    Tools
    Food Processor
    Ingredients
    ½ cup almonds
    ½ cup shredded coconut
    ¼ cup chia seeds
    ½ cup dried apricots
    ¼ cup cacao powder
    ¾ cup dates – soaked overnight
    ½ goji berries
    ¼ cup agave
    ¼ cup for cacao powder for coating
    ¼ cup Chocolate Recipe No 3 -optional
    Method
    Process almonds, coconut, dried apricots and goji berries until quite fine.
    Add chia seeds, cacao powder, dates and agave and process to a moist consistency
    Refrigerate for a few hours if too sticky to handle
    Roll tablespoonfuls of mixture into balls
    Place extra cacao powder in a bowl and roll balls around to coat them. To get a smoother finish reroll balls in the palm of your hand
    Store in an airtight container in the fridge
