Reduced Fat Butternut Squash Soup

By reading 100 Ways You Can Start Loving Yourself Right Now. I’ve taken notes and will do three of the things off this list tomorrow.

By cooking Cabot Cheese Reduced Fat Butternut Squash Soup. Regan, the R.D. working with Cabot Cheese sent me this amazing recipe. I can’t wait to make it!

Makes 4-6 servings

Ingredients:

  • 2 pounds butternut squash, peeled and cut into chunks
  • 4 cups vegetable broth
  • 1 cup plain yogurt (low-fat or regular)
  • 2 ounces Cabot 50% Reduced Fat Cheddar, grated (about 1/2 cup)
  • 2 tablespoons salted butter
  • 1/4 teaspoon ground red pepper (cayenne)
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon sugar (optional)
  • Several chives, cut into 1-inch pieces

Instructions:

  1. In large saucepan, combine squash and broth. Bring to boil, then reduce heat to medium. Simmer until squash is very tender, about 20 minutes.
  2. Remove from heat and let stand until slightly cooled; puree in batches in blender.
  3. Return puree to saucepan and place over medium-low heat. Stir in sour cream, cheddar, butter and red pepper. Season with salt and pepper.
  4. Stir until heated through (do not allow to boil). Taste soup, adding sugar if squash was not particularly sweet. Serve sprinkled with chives.

    I start my week of right with exercise and eating wholesome foods. I normally do this anyway but if I get off track I try to stick to eating even less processed foods.

    I love butternut squash soup but I usually make it dairy free and on the sweeter side.

    It’s weird but going grocery shopping on Sunday and preparing for the week is what starts my week out right. I’m lost when I can’t make it and have to buy lunch or eat out.
